Kick-start your morning with a deliciously nourishing granola mix – your protein packed breakfast essential! Made with fewer than ten simple ingredients and steps, it’s the perfect topping for your porridge, yogurt, or açai bowl. A must-try recipe for a satisfying, guilt-free and tasty start to your day!
Serves: 12 hearty portions
Preparation time: 15 minutes
Baking time: 17-21 minutes
Ingredients List
270 grams oats
100 grams nuts (I'd recommend pecans & walnuts)
20 grams coconut flakes
20 grams chia seeds
36 grams coconut sugar
1 teaspoon sea salt
25 grams cocoa powder
60 grams coconut oil
120 milliliters maple syrup
90 grams dark chocolate chips/ raisins (I'd recommend half and half!)
Method
Preheat the oven to 170° (or 340°F).
In preparation for Step 7, line 2-3 oven trays with baking paper (the use of one oven tray will require your granola to be baked in multiple batches).
To begin, chop the nuts into quarter sized pieces.
To a large bowl, add your oats, chopped nuts, coconut flakes, chia seeds, coconut sugar, salt, cocoa powder, mix together before leaving to one side.
Then, add your maple syrup and coconut oil to a small saucepan and melt over a low heat. Stir the mixture continuously until completely combined and smooth.
Pour the warm mixture into the dry ingredients and mix through thoroughly. Ensuring to completely cote the dry ingredients with the warm mixture to combine your granola mixture.
Next, spread the mixture loosely over your lined oven trays, to ensure the granola is baked evenly spread in a thin layer.
In total, bake for 17-21 minutes. After 8-10 minutes, to avoid large chunks clumping together. remove the trays from the oven and gently move the granola about using a fork or spatula, before returning to the over until dark brown and crispy.
Before adding your chocolate chips and/or raisins, allow the granola cool completely.
Transport into an airtight container stored at room temperature, your granola is best before two weeks.
